Xanthan Gum
Description
The production of xanthan gum is a biotechnological process. This polymer is produced by the bacteria Xanthomonas Campestris. It is capable of competing with and effectively replacing other natural gums. It has been reported that several other species of Xanthomonas produce extracellular polysaccharides, and in general, extracellular polysaccharides are produced by a wide variety of microorganisms. The powdered form of xanthan gum is a yellowish substance that is soluble in cold or hot water. The dissolution of Xanthan in water results in a highly viscous, opaque solution with pseudoplastic properties due to its rod-like conformation in solution and its high molecular weight.
