Sodium Lactate

Description

Sodium lactate is the sodium salt of lactic acid, and it has a mild saline flavor. It is naturally a liquid product but is also available as a powder. This substance is used as a preservative, an acidity regulator, and a bulking agent. The use of sodium lactate can result in an effective stabilization of the pH value of the product and can be used widely in the processing of poultry products in order to enhance their flavor. The moisturizing properties of sodium lactate are excellent. This product can be integrated with free water in products, thereby reducing their water activity and preventing microbial growth. It can be used to prevent the growth of bacteria such as Listeria monocytogenes, Salmonella, and E.coli, as well as the reproduction of pathogens in the processing and storage of meat, thus increasing its shelf-life and improving product safety.
